First, a quick safety note about gas

If you have a gas oven and you ever smell gas, stop. Don't troubleshoot, don't flip switches, and don't light anything. Leave the home and call your gas company or 911 from outside. A faint whiff when the burner first lights and then clears is normal, but a steady gas smell is not. Beyond that one rule, gas oven repairs really should be left to a professional. Igniters, valves, and gas lines aren't a safe place to experiment.

Electric ovens: the usual suspects

Most electric ovens heat with two metal elements: a bake element on the bottom and a broil element up top.

• A failed heating element. When an element burns out, it often shows. Look for a spot that's blistered, split, or has a visible break. A healthy element glows an even orange-red all the way across. If one section stays dark, or the element never glows at all, it has likely failed and needs replacing.
• A bad oven temperature sensor. This thin probe inside the oven tells the control board the actual temperature. When it drifts, the oven runs too hot or too cool, or heats unevenly even though the elements look fine.
• A control board problem. Less common, but a failing board can throw error codes, ignore your settings, or heat erratically.

Gas ovens: it usually comes down to the igniter

In a gas oven, the most common heating failure is the igniter. A weak or failing igniter has a tell:

• It clicks but never lights, or
• It glows but never gets hot enough to open the gas valve, so the oven never actually fires.

An igniter that's losing strength can also make the oven slow to heat or cause uneven cooking. Replacing one is straightforward for a professional, but because it's a gas appliance, this isn't a do-it-yourself job.

When everything looks fine but food still comes out wrong

Sometimes the oven heats and looks healthy, yet cookies burn on the bottom or a roast never quite finishes. Often the oven is simply off-calibration, running consistently above or below the temperature you set. Simple checks you can safely do first

1. Confirm the mode and settings. Make sure you're on Bake (not Broil, Warm, or a delayed-start setting) and that any Sabbath mode or child lock is off.
2. Watch an electric element heat. Set it to bake and look for an even glow across the whole element. A dark section is a clue.
3. Use an oven thermometer. Place an inexpensive oven thermometer inside, set the oven to 350, let it fully preheat, and check the reading. If it's off by 25 to 50 degrees or more, you've confirmed the oven is running off-temperature.
